Happy Sunday peeps
I made this fruity braided bread especially for dude bcoz even though I love bread on it's own or with some raisins thrown in, it is a different matter altogether once some other mixed fruits (like cherries, apricot, citrus peels) were thrown in. To me, these mixed fruits go well with that famous hari raya fruit cake instead of in a bread. Dude, however, just fancy this kinda bread, so it wasn't that much of a surprise that he managed to finish off 3/4 of the bread by himself. I'm not complaining, since the other boys also do not quite fancy this bread, we just shared the balanced 1/4 amongst us. Don't get me wrong, okay, I am sure this bread taste great & it's a gd recipe & all but my tekak just doesn't really gel with the other mixed fruits la, I will only stopped at sultanas or raisins.
GTG now as I need to clear my kitchen since we went to KC yesterday to look for some pans & tins. In the end, as per the usual, instead of stopping at pans & tins, some other stuff also landed accidentally in my basket. I found something useful (for me at least) & yet to test the gadget. I'll let you know later in my coming post, aite?. Have a good Sunday all :)
Ingredients:
350 g flour
40g sugar
¼ tsp salt
7g yeast
170ml fresh milk
1 egg
45g butter
1 ½ cups of dried fruits (raisins, cranberry, dried cherry)
Glaze (lightly beaten together)
1 egg
1 tbsp fresh milk
Topping
Some almond flakes
1 tbsp of sugar
Combine sifted flour, sugar, salt and yeast in a mixing bowl. Mix well Beat egg in milk, add slowing add it into the flour until it form a soft dough. Mix in butter and continue to beat until the dough is smooth. If at this stage the dough is a bit wet add a tbsp of flour. Add in all the dried fruits and nuts and mix well.
2. Cover mixing bowl with a damp tea towel. Leave aside in a warm place in the kitchen for an hour or until double in size.
3. Remove dough from the mixing bowl onto a lightly floured tabletop. Knead lightly then divide into 3 equal portions. Roll each portion into a strip 30cm long. Lay them side by side then gather the ends of the strips together and weave into a braid. Bring both ends of the braid together and make into a loop. Put it on a greased baking tray and cover with cling film. Let it rise for another 40 minutes until doubled in size.
4. Brush lightly with egg wash and sprinkle with almond flakes and sugar. Bake in a preheated oven at 350 degree F for 35-40 minutes or golden brown.

I have to agree with u abt mixed fruit and bread arh....I prefer mixed fruit dlm kek but definitely luv bread yg ada raisins ;)
heheh..tak arr..mana ada..but u know la org pompuan..biasakan bila dah capai sumthing, TERcapai gak another! Today I also have to realllyy kemas my kitchen, semalam budak2 tu dtg..but itu ini..harus I simpan balik all my baking stuff..abeh tambah brg yg baru ku balun lagikan..;)
DeleteI guessed our taste ada a bit similar la..abt that raisin in a bread..dude plak suka this bread..bagus gak la dari tak habis, baik ada orang yg tukang habiskan..jarang dia makan byk gitu..kalo tak ai kasi my jiran jer la..

ReplyDeleteni bole masuk dalam must do list jugak ni. nampak sedap. umi suka roti mcm ni esp kalau letak almond flakes atau walnut. fuhh.. tp smlm br ke kilang roti cari croissant tp dah habis pulak cuma dpt beli beef pie dan bun coklat aje. :p

ReplyDeletewah memang rajin betul yat buat roti ya..akak ni kalau buat roti if i don have much things to do..bukan apa..kita ni tak pandai buat roti sebenarnya..nak menggaya roti doh yang lembik tukan badan semua sakit2..hahaha..it will take at least half day to nak buat tu..heheh..cantik nampak roti yat ni..ada mix fruits lagi tu..
