It's Friday...yipeeeayyyy :)
Was flipping through Donna Hay mag & my eyes caught the wonderful sight of the madeira cake. It was soo..mouth watering that I knew I just had to bake one for myself..Lagipun this Madeira cake recipe is pretty easy to bake.I just knew it's gonna be delicious indeed......With it's buttery & that crunchy almond meal in the cake & that slight tangy lemony taste...... I so loved it!!! I googled a bit to find out more abt this cake, but one thing for sure, I didnt regret baking this one ;)
"The Madeira cake traditional version recipe is given a lemon flavoring. Lemon juice and lemon rind are added to the recipe to provide it with a slightly tangy taste. The original recipe dates back to 18th century or 19th century.This type of cake is dense, moist, and rich in flavor. The main ingredients are very simple, usually consisting only of butter, sugar, eggs, and flour.Another popular variation that is often served today is vanilla Madeira cake, made by replacing the lemon juice and zest with vanilla extract."

Recipe: Donna Hay Modern Classics 2
170g butter, softened
3/4 cup superfine sugar
1 Tbspn finely grated lemon rind
3 eggs
1.5 Tbspn lemon juice
3/4 cup all purpose flour
3/4 tspn baking powder
2/3 cup almond meal (or ground almond)
Gradually add the egg & the lemon juice, beating well (I beat the eggs 1 at a time).
Sift in flour & baking powder over the butter mixture & fold through with the almond meal.
Grease a 4" x 8" ( I used 4" x 9") loaf tin & line the base with baking paper.
Spoon in the mixture & bake for 45 mins-1 hr or until cooked when tested with a skewer. ( Mine need 1 hour of baking).
Cool in tin for 5 mins & then turn onto a wire rack.
Thank goodness it's Friday peeps...am so looking forward to another round of baking marathon (hopefully) this weekend. Have a wonderful weekend with your loved ones! Cheers...

Very the moist lah nmpk kek nih.. sure wangi sbb ada lemon juice.. I think my mum will love it sama macam mak Ayu but my mum tak suka choc cake!!

selain coklat yg gerenti kit makn, this cake pun kita berkenan jugak..dude pun bule tahan berkeping mintak..
